Croatian recipes: Jabuke u šlafroku

Fried apples wrapped in a thin dough is a dessert Croatians like to call ‘apples in a dressing gown’ (jabuke u šlafroku) and it is topped with vanilla ice cream.
Green Granny Smith apples are ideal for this dessert because they are sour and firm, and the “dressing gown” made of corn flour gives a special crunchiness to this dessert.
Ingredients
Apples – 4
Lemon – 1
Cornflour – 240 g
Eggs – 3
Sunflower oil – 25 ml
Dry white wine – 200 ml
Sugar – 40 g
Cinnamon – 1 tablespoon
Ice cream
Salt
Instructions
- Remove the core of the apples, peel them, cut them into 1 cm thick rings and transfer them to a bowl with water and lemon juice.
- Separate the egg whites from the yolks and add a tablespoon of sugar until stiff, and grate in lemon zest.
- In a bowl with the cornflour, add a pinch of salt, grated lemon zest and mix the ingredients.
- In a separate bowl, put the egg yolks in, pour in the sunflower oil and white wine and mix the ingredients with a whisk.
- Then the mixture with the egg yolks is slowly poured into the mixture with the flour, stirring constantly with a whisk so that no lumps form, and mix until you get a uniform mixture.
- Then mix 2 tablespoons of sugar into the resulting mixture and gradually add the egg whites and mix gently. When we get a frothy mixture, set the bowl aside and dry the apple rings with a kitchen towel.
- Then roll the apple rings in smooth flour, then immerse them in the foamy mixture and put them to fry until golden brown, in hot deep oil.
- Take the fried apple rings out on kitchen paper to soak up the excess oil. Meanwhile, add cinnamon with sugar in a bowl and stir.
- Roll the apples in a dressing gown in a mixture of sugar and cinnamon, arrange them on plates, put a scoop of ice cream in the middle of the rings and serve.
