Originating from the Austro-Hungarian Empire era, knedle have remained popular in Croatia for almost a century, particularly in the north.
There was some good news for lovers of the boiled potato-dough filled dumplings in Zagreb a few months back with the opening of a specialised local dedicated to the knedle.
Knedlica Da! Bar offers sweet and savoury versions of the favourite treat which are created in collaboration with several top confectioners and chefs, and the collaboration with Petra Jelenić and the mentorship of master confectioner Admir Karalić stand out.
The potato-dough dumplings are filled with various fillings and shaped into balls the size of a tennis ball, and the team from Knedlica Da! bar adheres to the concept of supporting local products, so they source ingredients from local family farms and use a high proportion of natural ingredients.
Initially, the knedle are available at Ambar bistro and bar on Britanac at Ilica 67, and they are also available to order through delivery services.
“When placing the knedle on the market, they decided on the franchising principle, and Ambar bistro and bar, due to its size, warmth, excellent position and pleasant ambience, was an excellent first choice to start the knedle story,” Journal wrote.
Knedlica Da! Bar’s own location in Tkalčićeva Street is also being prepared, which will become the central Zagreb oasis after renovations are complete.
In the new bar, visitors will be able to enjoy as many as 17 different flavours of knedle.
Savoury knedle will come in flavours of seven types of mushrooms, čvarci, pršut, cheese and black olives, and chicken and asparagus.
Sweet knedle flavours will include Ferrero, honey and almonds, chocolate and hazelnuts, cherries, apricots, plums, peanuts, coconut and almonds, Ambar pistachio knedle specialty, and some other sweet combinations of flavours.
Along with knedle, visitors can also add strawberry or raspberry sauces and Nutella cream, and the recipes also include chocolate crunch, ground and chopped hazelnuts, pistachios, almonds, walnuts and fresh and dried fruit.
