Croatian Recipes: Baron of Jaškovo Strudel

Štrudlafest will take place on the first weekend of September in Jaškovo near Ozalj just north of Karlovac. 

From 1-3 September visitors can sample over a hundred different flavours – from classic fruity and savoury ones to those with cracklings, hemp, and lamb, and even ones with mushrooms and beer.

One famous strudel from the festival is the Baron Jaškovo Strudel. This  strudel entered the Guinness Book of Records for the longest in the world when it measures 1,479.38 metres.

Below is the recipe. 

Baron of Jaškovo Strudel (approx. 12 servings)

Dough:

480 g of flour, 300 ml of oil, 20 g of salt, 300 ml of water

Filling:

1.4 kg of apples, 200 g of ground walnuts, 100 g of raisins, 240 g of sugar, 120 g of vanilla sugar, 10 g of cinnamon, 100 g of breadcrumbs

Topping:

Milk, vanilla pudding, sugar

Decoration:

Ground walnuts, mint, optionally: rum

Preparation:

Mix the listed ingredients to make the dough, which should rest for about 30 minutes. During this time, prepare the filling. Roll out the dough with a rolling pin, brush it with oil, and let it sit for 2-3 minutes to absorb the oil.

In the meantime, prepare the filling: peel and grate the apples and add sugar, vanilla sugar, and cinnamon to a bowl, mixing all the ingredients.

Next, stretch the dough with your fingers. Place breadcrumbs on half of the stretched dough.

The filling is placed on the dough, up to half, then roll up the strudel with the other half. Before placing the apples on the breadcrumbs, squeeze out the apple juice. 

Add the filling just like the breadcrumbs – on half of the stretched dough. Sprinkle walnuts and raisins on the apples, which you can optionally soak in rum. Roll up the strudel.

Place the strudel in a baking tray that you have previously greased with oil. Bake in an oven preheated to 180 degrees Celsius for 25-30 minutes. While the strudel is baking, prepare the warm vanilla sauce. 

Dust the strudel with powdered sugar, pour the topping over it, garnish with ground walnuts and mint, and serve while it’s still warm.

To make the strudel that entered the Guinness Book of Records, over 850 kg of flour and 10 kg of cinnamon were used… It measured 1,479.38 meters.
