Croatian recipes: Šnenokle

Made from just a few ingredients that are almost always in the fridge, this simple and delicious dessert is ideal for days when you feel like eating something sweet and don’t have a lot of ingredients on hand.

Called Šnenokle in continental Croatia and paradižot or paradižet in Dalmatia, is widely known around the world as floating island dessert. In Dalmatia, the first layer of paradižot is made from hard biscuits that cover the bottom of the pan. 

Below is a simple šnenokle recipe.

Ingredients 

Eggs – 4
Milk – 500 ml
Vanilla extract – 1-2 teaspoons
Sugar – 100 g
Salt
Ice cream – 1 scoop

Instructions

In a low, wide bowl, pour the milk and add 1-2 teaspoons of vanilla extract and bring to boil. 

In another bowl separate the egg yolks and whites. Add 30 g of sugar, a pinch of salt to the egg whites and beat until stiff.

Use a spoon to take the spoonfuls of egg whites and put them one by one on the hot milk.

After 1-2 minutes turn them over and leave for another 1 minute before taking them out (preferably in a bowl in which you will serve them) to cool.

In a separate bowl, mix 70 g of sugar, egg yolks and melted ice cream. Make sure the sugar melts completely and you get a nice light yellow cream.

Add the hot milk (which you cooked the egg whites in) to the cream, mixing constantly.

Now pour the cream back into the pot while stirring constantly, heat (do not let boil) once more to connect the eggs.

Pour the finished cream into the bowl with egg white dumplings and let it cool to room temperature so you can put it in the fridge to cool further.

Finally, sprinkle with grated chocolate if desired and serve.
