World-class Croatian pastry chef Tea Mamut shares her Almond and Carob cake recipe

For the first time in Dubrovnik, the street food festival “Bavarin” will be held from 13-16 October in the historical setting of the Lazaret.
Next week’s street food festival in the south of Dalmatia will have on offer food from the best local chefs and restaurants in Croatia.
One of those top professional chefs who will be at Bavarin is acclaimed pastry chef Tea Mamut and she has shared one of her recipes ahead of the festival.
ALMOND AND CAROB CAKE by Tea Mamut
(for diameter 26cm)
INGREDIENTS:
200g 55% chocolate
225g butter
1 orange zest
2g salt
10g cacao
75g toasted, ground almonds
75g ground carob
6 eggs
150g sugar
STEPS:
Melt the chocolate, butter, orange zest and salt in steam
In a separate bowl, sift cocoa, add carob and almonds
Add the egg yolks to the melted chocolate and butter (make sure it’s not too hot!)
Mix sugar with egg whites
Add the dry ingredients to the chocolate and mix in the ‘snow’ (blended egg whites and sugar)
Bake for about half an hour at 180C or until a toothpick comes out dry (maybe there will be some crumbs left because the cake is flourless and quite moist)
